(alpha) Updated README and added more mutation testing

This pre-release introduces govcr v5 alpha.

Also, some changes to package organisation.

The README is not up-to-date with the code:

• incorrect NewVCR usage
• filter functions are not yet implemented in this release
• this release does have support for track recording mutators
