BAU: Remove memory size overrides #2863

Proposed changes

What changed

Some of our lambdas have overrides for a flat 2GB memory - this means they are larger in dev, but smaller in prod.

This is likely outdated (and then copied) - there shouldn't be any reason for these to be scaled differently (and if there is, it should be documented).

Why did it change

Make our lambda sizes consistent.
