doc: removing pypy39 from Python documentation

Trying to avoid the issues with pypy39 removal with an alias that throws.

Fixes the build of ./pkgs/top-level/release.nix -A nixpkgs-manual.x86_64-linux after #370527

An alternative would be to give a no-allowAliases version of pkgs to the eager Python-version-enumerator.
