Migrate e2e tests to playwright

Unsure of the priority here, the repo was previously on cypress but had only one smoke test (the default one). All related dependencies are deprecated and were throwing security warnings, so that has been taken out in #500 , and this repo should be migrated to playwright when feasible to give us access to e2e testing.
