Are the UUIDs arbitrary? Are the hard coded somewhere? Do they have to follow some type of pattern?

UUIDs are arbitrary and different for each kind of service/characteristic. However there are several well-defined service/characteristic UUIDs used for common types of communication (temperature/heart rate/device info etc)
