Loaded timestamp column to seeds

How would you add a _dbt_loaded_at column to a seed table? I tried post-hook: and ALTER TABLE {{this}} ADD COLUMN ..." statement which works one time but fails subsequent runs. How would you solve this? If with a macro - how would that look?

Also, I keep getting syntax errors in the dbt_project.yml when adding a post-hook under seeds as shown in dbt docs, is it only me?
