Please tag releases

Howdy!

Please tag releases to match ones made on PyPI.

Tagging is the base for reproducibility and maintaining releases for us software maintainers.
It allows everyone to refer to a specifc tag/version/release when needed.

Having releases on the project is also great, and one can publish thoses releases to PyPI via a GH action.
