Folder mapping and multiple profiles

I have a project running on a dev and production infraestructure.

It consists mainly on 3 folders:

• src
• vendor
• web

I need to create a config that publishes "web" to remote /public_html and "src" and "vendor" folders should be uploaded to /private.

This needs to be applied to both a dev host and a production host which have different username/pass/host.

Is this possible? I don't understand how.
